Peach Cobbler.....it's peachy!


I love Peaches.
I love Peach Cobbler even more.
 
I picked up these beauties with
the intention of making a pie,
but found this recipe instead.


PeaCh CoBBLer recipe

Seeing as I had 4 Peaches,
I doubled the recipe.
I did make some changes though,
especially with the Sugar.




  • 4 large peaches, peeled and sliced
  • 1 1/2 cups sugar
  • plus 1/4 cup sugar
  • 1 cup butter, melted
  • 2cup all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground nutmeg
  • 1/2 teaspoon Cinnamon
  • 1 1/2 cups milk



  • I started making the recipe 
    and when I realized that doubling 
    made it 3 cups of Sugar,
    my teeth kind of screeched to a halt!
    So I put the 1 1/2 cups with
    the fresh Peach slices,
    and used the 1/4 cup 
    in the flour mixture.

    I also added Cinnamon,
    cause I LOVE Cinnamon.

    I  added Freshly ground Nutmeg.
    After using it in Oatmeal cookies,
    I'll never go back to bottled Nutmeg.
    Yum.

    Use a 9 x 11 dish.

    I followed the directions as followed
    for the rest of the recipe.

    This is one of the best Cobblers,
    I have ever tasted, even though,
    I overcooked it about 5 minutes
    (next time I'll keep it between 40 and 45 minutes}

    The cobbler bread is fantastic.
    It's in between a Biscuit and Cake,
    the perfect compliment to 
    firm fresh Peaches.

    Next time, 
    I think I might cut back 
    on the Sugar a bit more,
    and possibly the Butter, by 1/2 (4 tbls).
    I would also recommend
    when baking to put on a cookie sheet. 

    So, if you have some fresh Peaches,
    or any other fruit for that matter,
    I highly recommend trying this recipe.

    SwEEt PoTaTo Fries


     We LoVe these!

    Actually, 
    we just had them 
    for the first 
    time recently.

    Store bought, of course.

    Decided to make our own.
    and conveniently,
    I had some Sweet Potatoes
    that were in dire need of use.

    I rinsed and peeled them,
    and because we prefer wedges
    tried using the AppLe Slicer..
    ehhhh, eh~eh.
    No go, Figaro.
    It's a lot easier to just 
    slice them with a verra sharp knife.

    Drizzle Oil of Olive,
    enough for a light coating,
    toss around for a bit,
    then add some tasty spices.

    I had 3 large sweet potatoes,
    I used 
    *************
    1tsp Salt
    1tsp PePPer
    1tsp Garlic Powder
    1tsp PaPriKa

    Sprinkle over fries,
    toss around some more
    until evenly coated.

    The seasoning ended up being
    just right for us.
    As with any recipe,
    try and then adjust.

    I baked them at *450
    on a cookie sheet 
    for 30 minutes.
    Again,
    you can adjust to your
    preference of doneness
    but this worked out really well.

    mmm mmm, ya'll...
    these were Delish!

    They didn't take long at all;
    The Womb Fruits loved them,
    and they are a healthy alternative
    to fried fries.

    Sweet Potato Swirl Bread

    Lately, it seems I'm more into cooking than any arts and crafts of the GLiTTeR kind.
    This was an interesting recipe so I tried it.
    This is by no means a sweet bread;
    in fact you may even put a touch of jam on it with your morning or afternoon coffee.

    I could not distinctly taste the sweet potatoes, but they do make for a moist loaf.


    Since I scanned the recipe in,
    I'll skip posting all the extra wording.


    I used my usual 4 mini loaf pans.







    I baked the Sweet Potatoes for about 50 minutes,
    and let them cool in the oven.
    Man, did my house smell Divine!


    It did seem to be a rather thick dough, 
    for some reason I just thought it would be
    not so thick even though it's a bread recipe.

    Next time, I think I will lessen the cocoa
    because the cocoa swirl did seem to overpower the
    Sweet Potato a bit. I really wanted to taste both.



    I baked the loaves for approx. 50 minutes. When I slice tested it, it was still very moist on the inside, and I was thinking I would have to put it back in the oven for a few minutes. Once it completely cooled and set the next day, it was Perfect!  This is the kind of food that is great for a Picnic, or a trip to the Beach, or a Road Tripp..you can cut thick slices and wrap in wax or parchment paper for a heavy, satisfying snack. I will be trying this recipe again.

    Brown Sugar cOokies















    When making the Oatmeal coOkies
    a week ago,
    The BabyGirl asked
    if they had Brown Sugar cookies,
    and we found out,
    yes, yes they do.




    So we made them.
    It's another simple recipe, and quite tasty in a subtle way.
    It definitely tastes like a sugar cookie, with a hint of snickerdoodle.
    Dark Brown sugar is used in this recipe
    and I thought it would have had a heavier taste,
    maybe similar, in a loose way, to molasses.
    It's perfect with coffee, I know that.

    Since we've started making our own cookies,
    the Womb Fruits hardly touch the store bought stuff.




    This is the recipe we used.
    We rolled out balls of dough 
    and then gently flattened them,
    instead of spoOnfull drops.

    Next time, I'm also going to double the Spices and see how that tastes.

    Lemon Lemon Loaf from BAKED

    This loaf cake is Super~CaLa.
    If you, like, love, Lemon like I do, then this recipe is for You.

    It's from BAKED, a boOk I was turned on to by a BettieBlogger.
    I checked it out from my local library and this is the first recipe I tried.

    To some the recipe may look complicated, but it really isn't.
    Especially if you're organized.




    This is not for the calorie concious,
    this is for the TasTe Concious~
    oh, heLL Yes.








    Here's some tips:

    Zest your Lemons first.



    Trace the bottom of your pan onto the Parchment PaPer,
    cut,
    grease pans,
    lay PaPer,
    grease paper,
    set aside.






    Yes, that is 4 sticks of BuTTer.

    butt~ah.
    Mix up dry ingredients and set aside.
    Then mix your wet ingredients
    in food processor.
    Blend, Fold, Fill....

    I used my Mandolin Slicer to thinly slice some Lemons
    to layer on a couple of Loaves.

    I couldn't stop eating the batter...










    The makings of Lemon Syrup and Lemon Icing Glaze...
    Verra easy.
    For the Icing Glaze,
    the recipe said 4 to 6 tbls. Lemon Juice
    I ended up using 6 and it was a bit much tartiness.
    I would go with 4.


    These trusty Weapons of Mass Eatery
    made the job easy and oh so smooth.

    When baking, I set the timer for 30 minutes {second round}
    and thought they might need 5 more minutes.



    Next time, I will take them out at 30 min.
    The extra time made for a crusty crust..
    the less time will most likely give me the moister crust.


    Let them eat Loaf.

    HummuS

     I LOVE Hummus~
    The first time I had it,
    was around the age of 8.
    We were living in Kuwait
    and we made a batch
    for a class project
    It was great.




    To truly appreciate Hummus,
    you need to have homemade.
    Minimal ingredients that go a looong way,
    and
    Minimal time to make.
    You throw everything in the food chopper
    and give a whirl.


     This is a basic recipe.
    From here, I adjust it to my Taste.
    I prefer a bit more Tahini so I added 
    a few more tbls.
    I also added more Olive Oil 
    to get a smoother Hummus.
    The amount of Garlic was perfect!

    1 16 oz can of Chickpeas/Garbanzo Beans
    3~5 tbls. Lemon Juice
    1 1/2 tbls. Tahini
    2 Cloves of Garlic
    1/2 tsp. Salt
    2 tbls. Olive Oil

    I also prefer my Pita Bread toasted,
    in little triangles~ 

    Add some fresh Veggies
    {we had a Red, and Yellow Bell PePPer}
    and you've got a perfect meal.

    Make your Hummus the day/night before,
    to give it time for the Flavors 
    to really meld!

    Turkish saugsage and eggs

    Pronounced "soo~juk"

    If I totally want to score points with The Chook Man,
    I will cook this for Hims.

    Turkish sausage is this heavenly combination of taste.
    Not to sausage~y, or hot doggy,  it has a tang to it.
    The way my Mother always made it was to slice it,
    cook slightly on both sides,
    and then add the eggs.
    I turn the heat down a bit, to a high!med
    to give the eggs time to cook without burning.

     The two foods balance each other out wonderfully.
    It's definitely a nice change up from Bacon.

    I always drink mine with Hot Tea and 
    prefer to eat this for breakfast.
    The Chook Man will eat it anytime of the day,
    mostly lunch or dinner with a good Beer.
    It's a simple hearty meal.

    Rocky Road candy



     Dillard's had a Candy Counter upstairs with THE Best!
    Heavenly Hash.

    It was a sad day in KeLLy's Frontier
    when that Candy Counter
    was no more.
    Of course, Elmer's Heavenly Hash is an adored childhood Spring treat.

    First, it started as just finding a recipe for the candy.
    Then, it was
    "hey, Family Tradition"
    {you're singing it, you know you are}

    and this is the result.

    Here is where it goes from
    Heavenly Hash 
    to 
    Rocky Road.

    The taste was awesome.
    But it did remind me of RR, minus the ice cream.
    In fact, this would be perfect as a base in an Ice Cream Sundae.

    Very Simple too.

    INGREDIENTS
    *************
    Bag of Miniature MarshMaLLows
    Bag of Chocolate Morsels ~ used semi sweet
    1 1/2 cups of Nuts ~ I used Almonds
    1 can of Sweetened Condensed Milk
    2 tbls. BuTTer
    Dash of Vanilla


    Coarsely chop the nuts.
    You want the bigger pieces, 
    so a few pulses should do it.
    I also took the biGGer pieces out
    before putting it into the mixture.
    Mostly for a cleaner look.



    Using a double boil, 
    melt your bag of chocolate morsels.
    Add the BuTTer to help smooth it.


    Slowly whisk in the Condensed Milk.

    Mix in the Nuts and Miniature MarshMaLLows,
    coating quickly and thoroughly;
    Press into a lightly buttered dish.
    Eat and Enjoy.

    Although, The Family Mine really enjoyed this Candy,
    it is not quite what I was envisioning.
    I've already figured out where to go next,
    and am quite looking forward to giving it a whirl!

    Turkish Spinach

     

     This is another dish that I was raised with.
    It's just Delicious and a great way to eat Spinach that isn't in an artichoke dip!

    We grew up eating this with fresh, plain yogurt and of course, fresh bread.
    This is even much better the next day.

     Spinach, fresh ~ 3 to 5 bunches
    Ground Meat, 1/2 pd
    Medium OniOn, chopped
    Tomato Sauce, 1/2 to 3/4 cup
    Uncooked Rice, 1/4 cup
    Water, 1 cup
    Salt

    Soak the fresh spinach in cold salt water at least an hour.
    I use my Kitchen sink.
    Drain the salt water and
    WASH SPINACH THOROUGHLY !!!
    Trim the bottom of the stems to get the root bit off.
    Tear you bunches into halfs or thirds; set aside.

    Brown the ground meat; drain.
    Saute the chopped onion until nice and wilted.
    The Turkish Mother uses 2 tbls Crisco shortening; I used olive oil.

    Add the Ground Meat back into the pot.
    Add the TomaTo Sauce, and the Uncooked Rice.
    Add the Cup o Water.
    Place Spinach on top of this, place lid on pot, and begin cooking.
    I cooked on Medium/Medium Low heat.
    In about 10 to 15 minutes, give it a good stir
    so the ingredients begin to mix together. 

    Cook for another 10 to 15 minutes and check to see
    how far along the Rice is.
    When the Rice is done, the Spinach is done.

    In this batch, I used 3 bunches of Spinach;
    next time I will up it one or more bunches for more of a Spinach ratio.
