Lemon Lemon Loaf from BAKED

This loaf cake is Super~CaLa.
If you, like, love, Lemon like I do, then this recipe is for You.

It's from BAKED, a boOk I was turned on to by a BettieBlogger.
I checked it out from my local library and this is the first recipe I tried.

To some the recipe may look complicated, but it really isn't.
Especially if you're organized.




This is not for the calorie concious,
this is for the TasTe Concious~
oh, heLL Yes.








Here's some tips:

Zest your Lemons first.



Trace the bottom of your pan onto the Parchment PaPer,
cut,
grease pans,
lay PaPer,
grease paper,
set aside.






Yes, that is 4 sticks of BuTTer.

butt~ah.
Mix up dry ingredients and set aside.
Then mix your wet ingredients
in food processor.
Blend, Fold, Fill....

I used my Mandolin Slicer to thinly slice some Lemons
to layer on a couple of Loaves.

I couldn't stop eating the batter...










The makings of Lemon Syrup and Lemon Icing Glaze...
Verra easy.
For the Icing Glaze,
the recipe said 4 to 6 tbls. Lemon Juice
I ended up using 6 and it was a bit much tartiness.
I would go with 4.


These trusty Weapons of Mass Eatery
made the job easy and oh so smooth.

When baking, I set the timer for 30 minutes {second round}
and thought they might need 5 more minutes.



Next time, I will take them out at 30 min.
The extra time made for a crusty crust..
the less time will most likely give me the moister crust.


Let them eat Loaf.

Apple Cake


I LoVe Apple Cake.
It's an Autumn treat I look forward to every year. 
I used the same recipe from last year 
with GaLa apples.
The Gala apples really held up well 
and absorbed the Spices wonderfully.
I'm also a BIG fan of The Bundt Pan 
so the Apple Cake is always cooked in a bundt. 

Friday is a great day for Apple Cake because
Friday is ruled by Venus,
and apples are the perfect offering for Her.




I actually only used 4 of these {small/medium}apples 
and still had about 1/2 cup extra, which I used. 

The Delightful Daughter has great fun
sifting the flour with 
my Grandmother's old crank sifter. 
  
Cream Sugar, Butter, add Eggs...


Fold in 1/3 Flour mixture,
add half the buttermilk and fold,
1/3 Flour mixture,
second half of buttermilk,
last of the Flour mixture,
Apples, & Walnuts.
 
  
Bake at *350 for approx. 45 minutes.
Check with wooden chopstick 
(or skewer or toothpick}
to see if the inside is done.
You may have to do 10 minute cook~ments.
Watch for burnage.

Until a deep dark golden brown

I let my cake cool completely before removing.

Slice and serve.
I like mine with coffee,
The Delightful Daughter likes her's with whipped cream,
The Big and Little DuDes like their's as is,
walking around,

cHOCOLATE wALNUT bREAKFAST cAKE

 


I discovered this unholy~licious cake
from a cookbook found in the sale bin.

Quick and Easy Chocolate.

It was Love at first bite.

And quite by accident I found it to be PERFECT
for Breakfast.
It's not an overly sweet cake.
It's very heavy, dense.
You can taste the cocoa, and dark chocolate.
The walnuts really rock the taste.

Add your favorite cup of tea,
or java,

and breakfast is actually enjoyable again!

It's also the cake I'm baking the
night before our Road Tripp.
It's the perfect car~snacker.

When I bake this cake,
 I make a few adjustments:

*I double the recipe
* I use a 9" cheesecake pan w/ removable bottom
* I have not frosted mine yet.
  
Start the recipe as written with the correct measurements
at least the first time You bake it, to get a feel for it.

and Honey, this is Not a calorie counting cake..

 Ingredients:
*************
4 eggs
1/2 cup superfine sugar
1 cup all purpose flour
1 Tbsp unsweetened CoCoa
2 tbsp Butter, melted
2 1/4 oz dark chocolate, melted
1 1/4 cups chopped Walnuts
 a dash of Vanilla

Preheat oven to *325.
Grease a 7 inch deep round cake pan and line the base.

Place the eggs and sugar in a mixing bowl,
whish with electric beaters for 10 minutes
or until the mixtre is light and foamy and the whish keaves a trail that lasts a few seconds when lifted.



Sift together flour and cocoa,
fold into egg/sugar mixture.
Fold in the melted butter and chocolate,
and the chopped walnuts.

Pour into the prepared pan and bake
about 30 - 35 minutes until springy to touch.
Leave to cool in pan for 5 minutes,
then transfer to a wire rack.

Now if you decide to Frost the cake:

2 3/4 oz dark chocolate
1/2 cup butter
1 1/4 cups confectioners sugar
2 tbsp milk
walnut halves, to decorate.

Melt the dark chocolate and leave to cool slightly.
Beat together the butter, confectioners sugar
and milk in a bowl until the mixutre 
is pale and fluffy.
Whisk in the melted chocolate.

Slice the cold cake into 2 layers.
Spread up to 1/2 of the frosting on the top of one layer
place second layer next,
and then use rest of frosting on top of second layer.
Decorate with walnut halves.

Apple Cake


This is the recipe for the Apple Cake that I cooked Thanksgiving.
It is from the Essentials of Baking from Williams~Sonoma, a gift from The Turkish Mother.
I am being Extremely Lazy here, and scanning the recipe. Click on it and it will open into a screen size page.
And on top of that, I missed a lot of step~shots.
Including, as per the Standard Clause of Hecticness, the Finished~shot. {sigh}
But~ not to despair! It got Raves.



This bOOk has loads of great looking recipes. 
Considering how well this Apple Cake ended up, first try at that, I'd say its a go~go for future recipes.

I did not use the optional Maple frosting. 
With the extra diced Apples I had, I baked an Apple Crisp.
 
It really is a Delightful cake, ....try to sneak a piece when its still slightly warm!
